New Healthy Recipe Alert! (Taco Stuffed Peppers)

Taco Stuffed Peppers!

A Healthy Yet Delicious Food Choice for Dinner





~Healthy meat options~ 
1 lb grass fed ground beef
Or 
1 lb ground turkey
Or 
Sliced portabello mushrooms (vegetarian option)

4 medium/large bell peppers It can be made with bell peppers or jalapeno (remove seeds and wash)
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
1 teaspoon black pepper
1 cup 2% milk shredded cheese (Mexican blend tastes best)
Toppings
Sour cream (Low fat) 
Cheese
Cilantro

PREPARATION

  •  Preheat oven to 350˚F/180˚C.
  •  Wash and dry the peppers. Using a sharp knife, cut in halves and remove the seeds and pith. Arrange the peppers in an oven-safe dish.
  •  Bake the peppers for 10 minutes.
  •  While the peppers are baking, begin cooking the meat. Add olive oil to a medium-sized pan. Add onion, garlic, meat and cook over medium heat until brown then drain excess oils.
  •  Add seasonings and cook for an additional 2 minutes.
  •  Remove the pan from the heat
  •  Spoon the meat into the pre-baked peppers, being sure to press the mixture firmly into the peppers.
  •  Generously top with cheese and return to the oven for an additional 20 minutes.
  •  Allow the peppers to cool for 5 minutes before serving. Garnish with toppings of your choice.
  •  Enjoy!

  2. 1/4 TSP of Powdered Ginger

DIRECTIONS: 
  1. Pour 1/4 cup of lemon juice and 1/4 cup of apple cider vinegar into a small pot and bring to a gentle simmer. 
  2. Stir in 2-3 tbsp of raw, organic honey and 1/4 tsp each of cayenne pepper and powdered ginger (for a stronger formulation, use 1/2 tsp each of cayenne pepper and powdered ginger)

Walk 4 Wellness Charity Event

This event will be much more than “just a walk!”  We will have music by Flashback to motivate you before the walk.  There will be 50 wellness vendors to educate you on other ways to stay well. The Villages Clowns will be milling about making you smile and feel great before the walk. Plus the Villages cheerleaders will be cheering you on, encouraging you to do your best. The program before the walk will include hypnosis and EFT for a great walk, and stretching for safety. We will walk 3 miles around The Villages Polo Fields.

Quinoa Chicken Parmesan with Spiralized Zucchini Noodles



Ingredients:

1 cup quinoa
1 Tbsp dried Italian seasoning
2 large boneless, skinless Chicken breasts, cut in half, so they are thin (or use 4 small breasts, and pound them, thin & evenly sized)
1 tsp garlic powder
Sea salt and freshly ground black pepper, to taste
1/2 cup almond flour or whole wheat flour
2 large eggs, beaten
1/4 cup all natural shredded mozzarella cheese (optional)
1/4 cup grated Parmesan cheese
1 cup low-sugar organic marinara sauce
1/4 cup fresh basil leaves, chopped


Instructions:

1. Preheat oven to 400 degrees f.
2. Lightly oil a baking sheet or coat with nonstick spray. (I used avocado oil or olive oil spray)
3. In a large saucepan, cook quinoa according to package instructions.
4. Stir Italian seasoning into cooked quinoa, set aside.
5. Season chicken with garlic powder, sea salt and pepper, to taste.
6. Working in small batches, dredge chicken first in flour, dip into eggs, then dredge in quinoa mixture, pressing slightly to coat each breast.
7. Place chicken onto the prepared baking sheet. Place in the oven and bake for 20-25 minutes, or until golden brown, and cooked through.
8. Top with cheeses and marinara.
9. Place into oven and bake until cheeses have melted, about 3-4 additional minutes.
10. Serve immediately over spiralized zucchini noodles (I tossed my zucchini in a hot skillet with a touch of olive oil, sea salt and freshly ground black pepper, for 3 minutes before serving)

11. Garnish with fresh basil.

How to Warm Up Properly



   Athletes around Central Florida have been asking me what is the best way to stretch before activity or a sporting event. The best way is to stretch in motion. A warm muscle will not strain. Most people stretch statically and this puts the muscles to sleep and sets you up for injury. Static stretching is best to do after activity to help the muscle fibers recover.

The following is my pre-activity routine I recommend to athletes around the world.

1. Jog (20 yards)

2. Run back wards (20 yards)

3. High knees (20 yards)



4. Butt kicks (20 yards)


5. Lunges (20 yards)


6. Leg up to swing and touch opposite hand (alternate arm and leg) (20 yards)

7. Side Steps (over imaginary fence) (20 yards)

8. High knee and external rotating leg while stepping. (Alternate legs) (20 yards)

9. Arms (large circles) 20 seconds 


10. Arms (small circles) 20 seconds

Love the taste or hate it, apple cider vinegar has some pretty incredible health benefits. Made from fermented apples, research on this potent liquid has revealed promising results, including combating insulin and glucose spikes in type 2 diabetics, not to mention aiding weight loss. It can also soothe a sore throat and may relieve other symptoms of the flu, like nasal congestion and cough. Read on for some more reasons why you should add it to your health routine.
Like most things, the quality of the apple cider vinegar (ACV) matters. When purchasing ACV, select only raw organic vinegar—unlike other refined clear vinegars, this will be a murky brown color with sediment-like substance that settles to the bottom. It might not look pretty, but it’s the best and only option you should choose. You’ll also see labels that say “with the Mother,” sounds odd, but this means that it includes living nutrients and bacteria—this is the cobweb-like substance you’ll see floating in the vinegar.
ACV Uses and Benefits
There are various ways you can take ACV—take a small dose of around 1 to 2 teaspoons a day, dilute a spoonful in a glass of water, add it to an organic juice (preferably made in your juicer) or even mix it into your salad. Be cautious with continuous use of undiluted ACV; it is highly acidic and can be harsh on your tooth enamel. Here are a few of the possible benefits of ACV use—we encourage you to do more research to find other potential health benefits:
  • ACV is rich in potassium which aids the transmission of nerve impulses and helps to build muscles.
  • It’s high in acetic acid which can slow your body’s digestion of starch—this is what may lower the rise in glucose after a meal. A study done in 2004 and cited in Diabetes Care (an American Diabetes Foundation publication), demonstrated that participants with type 2 diabetes, prediabetes and even those without diabetes had better blood glucose readings when they took ACV before a meal. Those with type 2 saw a 25 percent improvement in their blood glucose levels.
  • Some research has also indicated ACV use may lower cholesterol and blood pressure.
  • ACV can balance your pH level due to its alkaline-forming properties. This has also been shown to regulate the presence of candida—which is a yeast-like fungus that aids digestion and nutrient absorption. When your body overproduces candida, it can cause many different health issues including fungal infections, digestive issues and chronic fatigue.
  • It may help relieve heartburn. It sounds counterintuitive, but some people get relief from taking a teaspoon of apple cider vinegar followed by a glass of water.
  • Try gargling ACV when you have a sore throat; the antibacterial properties of the vinegar may neutralize the infection. It can also help drain your sinuses when you’re stuffed up.
While there is research that shows a strong correlation between ACV use and various health benefits, these tips are not meant to be used in place of the recommendations of your healthcare professional and remember: what works for some, might not work for others.
