Paleo Tuscan Chicken Skillet


Paleo Tuscan Chicken Skillet
Savory and Fast! 
You'll love this easy Paleo recipe.

Ingredients:
  • 1 lb. Chicken Breast Tenderloins
  • 1 Onion, diced
  • 3 Cloves Garlic, minced
  • 12 oz. Mushrooms, sliced
  • ½ cup Sun-Dried Tomatoes, chopped
  • 15 oz. Fire-Roasted Tomatoes, diced
  • 1 tsp. Oregano
  • ½ tsp. Thyme
  • Cooking Fat
  • Sea Salt and Freshly Ground Black Pepper (to taste)



Directions:
  1. In a large skillet (over medium-high heat), melt some cooking fat
  2. Add the chicken tenderloins. Brown on each side for 3 minutes. 
  3. Remove chicken and set aside (add more cooking fat to the skillet, if necessary)
  4. Add the sliced mushrooms in a single layer and brown for a few minutes per side. Remove from the pan and set aside.
  5. Add the onion and cook until soft (about 4 minutes)
  6. Add the garlic and sun-dried tomatoes and sauté for 2 to 3 minutes.
  7. Stir in the diced tomatoes, oregano, thyme, and season with salt and pepper to taste
  8. Transfer the chicken back to the pan.
  9. Cover and cook until the chicken is cooked through (about 10 to 12 minutes)
    1. Return the mushrooms to the pan, combine well, adjust the seasoning if needed, and ENJOY!

Healthy "Mac-N-Cheese"

Healthy Cauliflower "Mac-N-Cheese"
Dig in to this healthier version of your favorite comfort food!

Cauliflower florets are smothered in a creamy, dairy-free cheese sauce that instantly evokes memories of this childhood classic with a healthy makeover.


Recipe: 

  • 1 head of cauliflower, cut into bite-sized florets
  • 1 cup unsweetened almond milk
  • 1 cup baby carrots
  • 1/2 cup raw cashews
  • 2 tbs nutritional yeast
  • 2 tbs yellow mustard
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tbs chopped scallions, plus more for garnish
  • 1 tsp sea salt
INSTRUCTIONS:
  1. Begin by bringing 2 cups of water to a low boil in a medium-sized pot. Add cauliflower florets and boil 10 minutes, covered, to tenderize. Drain and set aside.
  2. While the cauliflower steams, combine cashews and carrots in a separate small pot with enough water to cover. Bring to a boil and reduce heat to simmer. Cover and simmer for 10-12 minutes or until carrots are soft.
  3. Drain carrots and cashews. Place into a blender with almond milk, nutritional yeast, mustard, onion powder, garlic powder, paprika and sea salt. Blend until smooth and creamy.
  4. Combine prepared cauliflower and "cheese sauce"
  5. ENJOY!!

Chiropractic in the media

I’m  sure that many of you have seen chiropractic being discussed in the media lately. Tomorrow on Dr. Oz he will be discussing the safety of chiropractic adjustments along with a panel of medical experts. This all comes about after the unfortunate death of mode Katie May who suffered a trauma to her neck and after suffering the trauma to her neck she sought care from her chiropractor. Below is some basic information on the type of condition she had and how chiropractic has been proven time and time again to be completely safe and effective.

  
  • Arterial dissection of the cervical (neck) arteries is a very rare condition occurring in 2-3 persons per 100,000 population per year. As this condition often produces neck pain and headaches, many times individuals will consult with their health care providers for advice or treatment in response to the discomfort.​​
  • Whether a person consults a medical doctor or doctor of chiropractic, stroke can follow at an equal rate regardless of the type of provider. Epidemiologic studies over many years with millions of patients do not reveal any greater association of stroke for persons under chiropractic care compared with persons under medical care.
  • In February 2016, a team of neurosurgeons at the University of Pennsylvania Hershey Medical Center published research concluding, “There is no convincing evidence to support a causal link between chiropractic manipulation and cervical artery dissection (CAD).”
  • Chiropractic manipulation has shown to be safe, effective treatment for neck, mid back and lower back pain. A comprehensive review of scientific evidence noted that there is as much evidence supporting chiropractic care as for other treatments such as prescription and non-prescription drugs and surgery.


The Journal of American Medical Association now recommends Chiropractic as a first means of treating low back pain.

As  springtime  approaches,  leaves  begin  to  appear,  flowers  bloom  and  the new season of green grass begins to grow. It is a wonderful time of the year to  see  life  come back  and  all  the  beauty  it  has  to  offer.  That  is  of  course  if you’re  not  a seasonal allergy  sufferer.  The nasal congestion, runny nose, sneezing, coughing, wheezing, itchy eyes and throat, skin rashes, headaches and fatigue may just hamper the enjoyment that many other derive from this time of year. 

So   what   actually   is   an   allergic   reaction?   It is basically the body’s inappropriate response to substances it believes is foreign. When an antigen or  foreign  substance enters  the  body  the  body  produces  antibodies  in  direct response to this invader. These antibodies (referred to as immunoglobulin E or IgE) are perfect fits and combine with the antigen like a glove would fit a hand.  This  combination  then  impacts  on  a certain  type  of  white  blood  cell called  mast  cells.  Mast cells are predominately found in the nose, skin, lungs, and digestive tract. This antigen-antibody reaction creates a release of a substance from the mast cells called histamine.  The  nose,  eyes  and breathing  passages  have  receptors  on  them  specific  for  histamine  and  when it arrives  the  itching,  sneezing,  swelling  etc. begin.   

Most  sufferers  will  take  over  the  counter  medications  due  to  the  severe discomfort allergies  can  create.  Unfortunately  most  medications have  side effects  such  as fatigue  or  heart  rhythm  disturbances.    Some  of  the  over  the counter  medications can  have  serious  side  effects  if  combined  with  other medications. 

There are some natural remedies that work fairly quickly with absolutely no side  effects. One  of  the  most  effective  remedies  that  I  have  seen  over  the years is a product made by Standard Process called Antronex. Discovered by  Japanese  researchers  in  the 1920’s,  Antronex  has  a  strong  anti-histaminic effect  and  is  actually  a  special  liver extract  which  the  Japanese  named Yakitron.  Yakitron  is  the  blood  filtering  fraction of  the  liver  so  the  product quickens  the  detoxification  of  the  blood  in  its  flow through  the  liver.  Antronex works best in an acidic gastrointestinal tract so you may also need some digestive enzymes to acidify yourself.  People  with  the  severest  of allergies  will  usually  start  with  three  tablets  up  to  four  times  a  day.  Within two days a significant improvement is usually noticed.

I Lost 14 pounds in 16 days!!!

Walk 4 Wellness Charity Event

This event will be much more than “just a walk!”  We will have music by Flashback to motivate you before the walk.  There will be 50 wellness vendors to educate you on other ways to stay well. The Villages Clowns will be milling about making you smile and feel great before the walk. Plus the Villages cheerleaders will be cheering you on, encouraging you to do your best. The program before the walk will include hypnosis and EFT for a great walk, and stretching for safety. We will walk 3 miles around The Villages Polo Fields.

Orange Lemon Lime
6 slices of orange
3 slices of lemon
3 slices of lime


Lemon Raspberry Mint
8 raspberry
3 slices of lemon
3 mint leaves


Lemon Cucumber Mint
4 slices of lemon
6 Slices of Cucumber
3 mint leaves


Blackberry Cherry Lime
8 Blackberries
4 cherries
3 slices of lime


Combine fruit and water and refrigerate overnight! Enjoy the next day!
Don’t forget to discard after 48 hours!

Simple Posture Correction Exercises

1.     Door way Exercise
1) Stand in a corner or a doorway
2) Put one hand on each wall or doorframe about shoulder height
3) Slowly lean forward into the corner or doorway with your upper body
4) Hold for 45 seconds to 1 minute
5) Repeat 3-5 times daily

1.     Bent Over Rows
a.      Stand on your feet with shoulder width apart
b.     Grab a bar or dumbbells with your palms facing inwards and just outside your shoulder blades.
c.      Bent over and keep about 45 to 65 degrees on your knee.
d.     Pull with your elbows toward your chest
e.      Keep your upper back parallel and open your chest
f.       Repeat 10 times

1.     Lying on back with Arms out
a.      Lay in the supine position (on your back)
b.     Tilt your head up placing the parietal (top part) of your skull on surface
c.      Extend arms out and turn thumbs downwards (toward the face)
d.     Hold for 30 seconds and watch abdomen raise when breathing
e.      Repeat 5-10 times

1.     Lying on stomach/head retractions
a.      Lay in the prone position (face down)
b.     Extend arms and rotate thumbs up
c.      Flex chin and retract head
d.     Repeat 10 times retracting head back

Quinoa Chicken Parmesan with Spiralized Zucchini Noodles



Ingredients:

1 cup quinoa
1 Tbsp dried Italian seasoning
2 large boneless, skinless Chicken breasts, cut in half, so they are thin (or use 4 small breasts, and pound them, thin & evenly sized)
1 tsp garlic powder
Sea salt and freshly ground black pepper, to taste
1/2 cup almond flour or whole wheat flour
2 large eggs, beaten
1/4 cup all natural shredded mozzarella cheese (optional)
1/4 cup grated Parmesan cheese
1 cup low-sugar organic marinara sauce
1/4 cup fresh basil leaves, chopped


Instructions:

1. Preheat oven to 400 degrees f.
2. Lightly oil a baking sheet or coat with nonstick spray. (I used avocado oil or olive oil spray)
3. In a large saucepan, cook quinoa according to package instructions.
4. Stir Italian seasoning into cooked quinoa, set aside.
5. Season chicken with garlic powder, sea salt and pepper, to taste.
6. Working in small batches, dredge chicken first in flour, dip into eggs, then dredge in quinoa mixture, pressing slightly to coat each breast.
7. Place chicken onto the prepared baking sheet. Place in the oven and bake for 20-25 minutes, or until golden brown, and cooked through.
8. Top with cheeses and marinara.
9. Place into oven and bake until cheeses have melted, about 3-4 additional minutes.
10. Serve immediately over spiralized zucchini noodles (I tossed my zucchini in a hot skillet with a touch of olive oil, sea salt and freshly ground black pepper, for 3 minutes before serving)

11. Garnish with fresh basil.
